A year has pasted since I made the Hello Kitty cake for my Niece's birthday party. This year I asked her if she wanted her aunt to make her another cake and what it should look like. She told me that she would very much like a rabbit cake because she really likes the animal. She then started to draw how the eyes and mouth should look like. I told her I would do my best. The eyes are inspired by 'My little pet shop'.
First I made 2 round chocolate mud cakes which I cut in half.
I then made a chocolate cake with coconut icing colored green to look like grass. I cut a hole in the middle of the grass and started to 'build' the body of the rabbit with the chocolate mud cake which I put together with milk chocolate cream filling.
I then cut of a piece from the last half of the chocolate mud cake to make the tail. The ears are made of melted marshmallows put on an edible 'string' and attached with a small toothpick. Finally I covered the hole cake with chocolate cream and finely grated milk chocolate to look like fur. The eyes and teeth are made of fondant and the nose is a red peanut M&M's.
'Cakesonmymind' is my creative escape from the every day life. It is a place where I can be creative and share my passion for making and creating cakes.

Telephone
I worked full time for 3 months during this summer and wanted to make my colleagues a cake for my last day at work. I decided to make a cake in the shape of the most important tool we work with. Guess what I worked with...
The base is a banana layered cake with a toblerone cream filling and a chocolate butter icing. The phone is made of chocolate mud cake covered with white fondant and M&M's with black icing. The cord of the phone is a piece of licorice which I twisted and attached with black icing.

Softball
Can you make a Softball cake? Of course was my answer, but I didn't even know what it looked like - but Google is my friend ;-)
Again I decided to make 2 different chocolate cakes. The grass is a coconut colored icing. The softball itself is made in my princess dress mould (I love it it is so versatile!) I only needed a small portion in the shape of a ball but I found that it worked quite well. I then put chocolate butter icing on it before covering it with white fondant and making the stitching.

Spiderman
I was asked to make a spiderman cake for a girl's 5th birthday. I was asked by a friend to take pictures as I go about to put the cake together. Here it is:
Then I added some more cut off bits to shape Spiderman's chest and make him look muscular.
I then covered the entire cake with red fondant... and then did the black lines and the spider. The eyes are made of white fondant. The end result was this:
I baked a chocolate mud cake in the princess dress mould and then cut it down the middle. Then I put them together with some of the scraps to shape the head. The square cake is a different kind of chocolate cake baked in a small square mould.

Princess
My youngest niece turned 3 years old on the hottest day of July this year. She too deserved to be surprised with a birthday cake. I had just bought my princess dress cake mould and wanted to make her a princess cake as she likes fairytails and Cinderella.
The grass cake is a chocolate cake with butter icing colored green. The dress is a chocolate mud cake with a butter chocolate icing with a fondant coat with M&M's. Cinderella is holding the Danish flag as it is tradition in Denmark to have flags every where.

Butterfly
One of my friends turned 30 in the spring and asked me to make a nice and spring like cake for her birthday party. She really likes butterflies and the color green.
The green cake is a coconut and berry cake with a coconut icing colored green to make it look like grass. The butterfly cake is a chocolate mud cake with raspberry and mascarpone and cream. To make the butterfly you can make one round cake, cut out a small strip from the middle to make the body. Turn the 2 halves of cake so the round sides are facing each other. Then put the strip cut off in the middle and shape the body how you like. Then shape the 2 halves to make wings.

60
My mother was turning 60 and I wanted to surprise her with a cake for her birthday party:
The cake is a classic Danish layered cake but with 4 layers to the usually 3 layers. 2 layers are of a classic sponge cake. The other 2 layers are chocolate mud cakes. The filling is one with chocolate and caramel cream and two with raspberry and mascarpone cream. When cutting the cake it makes wonderful looking 'strips' pieces. The coting of the cake is a marzipan layer and then covered with white fondant to make a smooth finish.
Everything on the cake is hand made. Even the roses and leaves. This is only my second time making roses and leaves. I have used templates to cut them out and they are made of fondant. My mother's favorite colors are purple.
